Diet and Crohn's Disease - Gluten Free

I hear stories online about gluten free diets and how they help crohn's disease sufferers. But I also hear stories about the food tasting like cardboard. That's why I want to try some meals for myself.

For those who don't know, a gluten-free diet completely free of ingredients derived from gluten-containing cereals: wheat (including kamut and spelt), barley, rye, and triticale, as well as the use of gluten as a food additive in the form of a flavoring, stabilizing or thickening agent. Thanks Wikipedia for that definition. The problem with going Gluten free is finding food. Gluten is in virtually every processed food.

This is usually a diet for Celiac disease sufferers. When people have Celiac disease they are intolerant to gluten. Eating food with gluten causes the villi in their intestine to flatten. When this happens, they do not absorb food or nutrients.

I've learned that GI symptoms of Celiac disease are very similar to Crohns. This diet could help minimize the symptoms of Crohn’s disease. I'm all for that.

I'm sure Jen from A Life of Sugar and Spice can make some great suggestions of meals to start with. If anyone knows any easy, tasty gluten free recipes, send them to me.

I make variations on her recipes with almond flour because a) I am allergic, and b) almond flour is quite spendy. Hope you can find some things here that you like :)

I'm in week 4 of a gluten free diet so I'm still learning. There are a lot of gluten free blogs that I have been following. Jen's blog "A Life of Sugar and Spice is a great source. well... sometimes i supplement with rice flour which has kind of a nutty taste, sometimes besan which is flour made from chickpeas (harder to find), and sometimes i can get away with not supplementing anything. it depends on the recipe and what kinds of changes in the consistency of the product you're willing to tolerate :)
